Thracian-style sweet vegetable trahana is the mild, sweet version of spicy vegetable trahana. It contains a variety of summer vegetables, is highly nutritious, suitable for fasting, and rich in vitamins and iron. It also contains sesame, considered a superfood.
Cooking Instructions (Serves 4):
In a pot, bring 4 bowls of water or milk (depending on your preference) to a boil. Add 8 tablespoons of vegetable trahana (2 per serving), 1 tablespoon of butter or olive oil, and a pinch of salt. Simmer over low heat, stirring continuously, until it thickens (approximately 10 minutes).
Serve hot, either plain or topped with grated cheese.
